Oh my, how I love Tendergreens Restaurant. And, their green hummus Recipe. I’m thankful for their quick and healthy farm to table food options.  I used to frequent their 1st Culver City location. Actually, we renovated the building a decade ago to create the vanilla shell before the design phase and restaurant move in. Back then, I do not recall that green hummus was on the menu. However, last summer they opened one of their new locations in my home town. Yay! Now I cannot get enough of that Green Hummus. So nom, nom. Thankfully they are kind enough to share the recipe (AND lots of their recipes) on their site. Seriously you must get down to Tendergreens for their healthy grub and definitely make this Hummus–it might just replace your other favorite hummus recipes.

The added ingredients give the hummus dish more texture and substance to stand up on the plate, as well as an extra bite in flavor and added vitamins and minerals.

Yield: 5 cups


2 cups spinach

1 cup Arugula

1/4 cup cilantro

1/4 cup diced green onion

2 small cloves garlic

1 cup olive oil

4 cups garbanzo beans

1/4 cup lemon juice

1 1/2 teaspoons salt

1 teaspoon pepper


Using a food processor, combine the spinach, arugula, cilantro, green onion and garlic

Slowly add the olive oil and beans keeping the food processor running

Finish by adding the lemon juice, salt and pepper
